Deconstructed Ambrosia Salad Recipe

Springtime offers the opportunity for us to get our hands on the freshest fruits and vegetables, and as the weather continues to warm, we naturally start to crave fresher ingredients. This deconstructed Ambrosia Salad offers the perfect amount of sweetness and freshness to satisfy those springtime cravings!

Ingredients needed:

½ cup of heavy cream

1 tablespoon sugar

4 ounces sour cream

6 ounces of mini marshmallows (about 3 cups)

1 cup clementine or mandarin orange segments

1 cup chopped pineapple

1 cup grated coconut

1 cup toasted then chopped pecans (or pistachios)

½ cup drained maraschino cherries

6 mint leaves

– Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Next, add sour cream to mixture then whisk to combine. Now add the marshmallows, orange, pineapple, coconut, pecans, and cherries then stir to combine. Lastly, transfer to a glass serving bowl, cover, and place in refrigerator for 2 hours before serving. Finish with fresh mint leaf garnish.
